Vegan Coquito

Ingredients

  • 3, 15 oz cans full fat coconut milk
  • ¾ cup pure maple syrup
  • 1 tsp vanilla bean paste
  • 1 tsp nutmeg
  • 1 ½ tsp cinnamon
  • ½ tsp cloves
  • 1 cup spiced rum
  • 2 tsp coconut extract

Directions

  1. In a medium saucepan, bring 2 cans of the coconut milk and pure maple syrup to a boil.
  2. Reduce the heat and let simmer for about 30 minutes until slightly thickened and
  3. reduced. Remove from the heat and let cool.
  4. Add the cooled sweetened condensed coconut
  5. milk and the remainder ingredients to a
  6. high speed blender. Blend on high until smooth and creamy, about 1 minute.
  7. Pour into an airtight container and store in the fridge until ready to serve!
