Tahini Kale Caesar

Ingredients

  • 2 head lacinato kale, thinly sliced
  • 1 tbsp extra virgin olive oil
  • ½ lemon, juiced
  • Craize Plantain Corn Crackers, crushed
  • Parmesan, to garnish

Tahini Caesar

  • ¾ cup tahini
  • 4 cloves garlic, grated
  • 1 lemon, juiced
  • 2 tbsp capers
  • 1 tbsp caper brine
  • Pinch salt and pepper
  • Warm water as needed

Directions

  1. Make the tahini caesar dressing: Add all ingredients except the water to a food
  2. processor and pulse until smooth, adding a splash or two of water as needed to thin the dressing to desired consistency.
  3. Add the kale to a large bowl and drizzle with the olive oil and lemon juice. Use your hands to massage the kale for a few seconds to make it tender.
  4. Drizzle desired amount of dressing over the kale and toss to coat. Top with crushed plantain corn crackers and parmesan and enjoy!
