Tahini Kale Caesar
Ingredients
- 2 head lacinato kale, thinly sliced
- 1 tbsp extra virgin olive oil
- ½ lemon, juiced

Craize Plantain Corn Crackers, crushed
- Parmesan, to garnish
Tahini Caesar
- ¾ cup tahini
- 4 cloves garlic, grated
- 1 lemon, juiced
- 2 tbsp capers
- 1 tbsp caper brine

Pinch salt and pepper
- Warm water as needed
Directions
- Make the tahini caesar dressing: Add all ingredients except the water to a food
- processor and pulse until smooth, adding a splash or two of water as needed to thin the dressing to desired consistency.
- Add the kale to a large bowl and drizzle with the olive oil and lemon juice. Use your hands to massage the kale for a few seconds to make it tender.
- Drizzle desired amount of dressing over the kale and toss to coat. Top with crushed plantain corn crackers and parmesan and enjoy!
