Tahini Kale Caesar
2 head lacinato kale, thinly sliced 1 tbsp extra virgin olive oil ½ lemon, juiced
Craize Plantain Corn Crackers , crushed Parmesan, to garnish ¾ cup tahini 4 cloves garlic, grated 1 lemon, juiced 2 tbsp capers 1 tbsp caper brine
Pinch salt and pepp er Warm water as needed
- Make the tahini caesar dressing: Add all ingredients except the water to a food
- processor and pulse until smooth, adding a splash or two of water as needed to thin the dressing to desired consistency.
- Add the kale to a large bowl and drizzle with the olive oil and lemon juice. Use your hands to massage the kale for a few seconds to make it tender.
- Drizzle desired amount of dressing over the kale and toss to coat. Top with crushed plantain corn crackers and parmesan and enjoy!
