Mojo Meatballs - Serves 4 - 6

Ingredients

Mojo Sauce

  • 2 bunches cilantro
  • 2 jalapenos, seeded
  • 2 limes, juiced
  • 2 tbsp white wine vinegar
  • ⅔ cup avocado oil
  • Pinch of salt

Meatballs

  • 1 bag Craize Sweet Corn Crackers
  • 1 shallot, finely diced
  • ½ tsp cumin
  • ½ tsp oregano
  • 1 ½ tsp salt
  • ½ tsp pepper
  • 2 eggs
  • ¼ cup milk of choice
  • 1 lb ground beef
  • 1 lb ground pork

Directions

  1. Preheat the oven to 400 degrees Fahrenheit and line a large baking sheet withparchment paper.
  2. Make the mojo sauce by combining all of the ingredients into a blender or foodprocessor. Blend or pulse until smooth. Set aside while you prepare the meatballs.
  3. Pour 1 bag of Craize Sweet Corn Crackers into a food processor, and pulse until youreach breadcrumb consistency.
  4. In a large bowl, whisk together the shallot, cumin, oregano, salt, pepper, eggs, and milk.Once whisked, pour in the crushed crackers and mix again. Let sit for 5 minutes.
  5. Add the ground beef and ground pork, and use your hands to gently mix the mean intothe wet mixture until just combined.
  6. Form the meatball mixture into 8 large meatballs and place on the lined baking sheet.Bake for about 30 minutes or until cooked through.
  7. After the meatballs are cooked, place the mojo sauce into a large skillet over mediumheat. Once simmering, add the cooked meatballs and toss. Remove from the heat andserve immediately over rice or alongside your favorite vegetable!
