Preheat the oven to 400 degrees Fahrenheit and line a large baking sheet withparchment paper.
Make the mojo sauce by combining all of the ingredients into a blender or foodprocessor. Blend or pulse until smooth. Set aside while you prepare the meatballs.
Pour 1 bag of Craize Sweet Corn Crackers into a food processor, and pulse until youreach breadcrumb consistency.
In a large bowl, whisk together the shallot, cumin, oregano, salt, pepper, eggs, and milk.Once whisked, pour in the crushed crackers and mix again. Let sit for 5 minutes.
Add the ground beef and ground pork, and use your hands to gently mix the mean intothe wet mixture until just combined.
Form the meatball mixture into 8 large meatballs and place on the lined baking sheet.Bake for about 30 minutes or until cooked through.
After the meatballs are cooked, place the mojo sauce into a large skillet over mediumheat. Once simmering, add the cooked meatballs and toss. Remove from the heat andserve immediately over rice or alongside your favorite vegetable!
