Ingredients
- 1 ½ cups cooked corn kernels
- 1 tbsp mayo
- 1 tbsp sour cream
- ¼ tsp chili powder
- 1 lime, juiced
- Pinch of salt and pepper
- Shredded oaxaca cheese
- Craize Sweet Corn Crackers
- Cilantro, to garnish
- Cotija, to garnish
Directions
- In a bowl, toss the corn, mayo, sour cream, chili powder, lime juice, and a pinch of salt and pepper until combined. Set aside.
- Preheat the oven to 400 degrees Fahrenheit and line a small baking sheet with parchment paper.
- Spread an even layer of Craize Sweet Corn Crackers on the prepared baking sheet. Sprinkle desired amount of cheese onto the crackers, followed by the elote mixture.
- Place into the oven and bake for about 5-10 minutes or until the cheese is melted and bubbly.
- Garnish with cilantro and cotija and enjoy!
