Creamy Chorizo Queso

Ingredients

  • 1 tbsp olive oil
  • ½ sweet onion, finely diced
  • 1 poblano pepper, seeded + finely diced
  • 1 ½ tbsp all-purpose flour
  • 1 ½ cups whole milk
  • 1 tsp garlic powder
  • ¼ tsp cumin
  • 8 oz monterey jack cheese
  • 8 oz pepper jack cheese
  • ½ lb chorizo sausage, cooked
  • Cilantro, to top
  • Craize, to serve

Directions

  1. Preheat the oven to broil.
  2. Heat a skillet over medium heat and add the olive oil. Add the onion and poblano and saute until softened and fragrant, about 5-7 minutes.
  3. Stir in the flour, then quickly whisk in the milk, garlic powder, and cumin. Reduce the heat to low, stirring often, until thickened.
  4. Slowly add the cheese, reserving a little to sprinkle on top, stirring until combined. Once combined, pour the cheese mixture into a cast iron skillet and top with the remaining cheese and chorizo. Broil for 2-3 minutes until bubbly.
  5. Top with cilantro and enjoy with your favorite Craize crackers!
