Heat a skillet over medium heat and add the olive oil. Add the onion and poblano and saute until softened and fragrant, about 5-7 minutes.
Stir in the flour, then quickly whisk in the milk, garlic powder, and cumin. Reduce the heat to low, stirring often, until thickened.
Slowly add the cheese, reserving a little to sprinkle on top, stirring until combined. Once combined, pour the cheese mixture into a cast iron skillet and top with the remaining cheese and chorizo. Broil for 2-3 minutes until bubbly.
