Ingredients
- 1 tbsp olive oil
- ½ sweet onion, finely diced
- 1 poblano pepper, seeded + finely diced
- 1 ½ tbsp all-purpose flour
- 1 ½ cups whole milk
- 1 tsp garlic powder
- ¼ tsp cumin
- 8 oz monterey jack cheese
- 8 oz pepper jack cheese
- ½ lb chorizo sausage, cooked
- Cilantro, to top
- Craize, to serve
Directions
- Preheat the oven to broil.
- Heat a skillet over medium heat and add the olive oil. Add the onion and poblano and saute until softened and fragrant, about 5-7 minutes.
- Stir in the flour, then quickly whisk in the milk, garlic powder, and cumin. Reduce the heat to low, stirring often, until thickened.
- Slowly add the cheese, reserving a little to sprinkle on top, stirring until combined. Once combined, pour the cheese mixture into a cast iron skillet and top with the remaining cheese and chorizo. Broil for 2-3 minutes until bubbly.
- Top with cilantro and enjoy with your favorite Craize crackers!
