Arroz Con Leche (Dairy Free, Vegan)

MIngredients

  • 1 cup long grain white rice
  • 1-2 cinnamon sticks
  • 11 oz can sweetened condensed coconut milk
  • 9.5 oz can evaporated coconut milk (or canned coconut cream)
  • 1 cup unsweetened dairy-free milk of choice
  • 1 tbsp pure maple syrup
  • Cinnamon, to garnish
  • Craize Guava Crackers, to garnish

Directions

  1. Heat a large pot over high heat and fill it with water. Once boiling, add the rice andcinnamon sticks. Boil for about 15-17 minutes, then drain the rice. Remove thecinnamon sticks.
  2. Place the rice back into a pan over medium heat and add the sweetened condensedcoconut milk, evaporated coconut milk, dairy-free milk of choice, and maple syrup.
  3. Bring to a heavy simmer, and reduce the heat to medium-low.
  4. Simmer, stirring frequently, for about 20-30 minutes or until the rice is fully cookedthrough and the mixture has thickened into a pudding consistency.
  5. Remove from the heat and let cool.
  6. Dish up into your serving dishes, and garnish with a pinch of cinnamon and a CraizeGuava Cracker!
