Jalapeño Pineapple Pico de Gallo
- ½ pineapple, finely diced
- ½ red bell pepper, finely diced
- ¼ medium red onion, finely diced
- 2 jalapeños, seeded and finely diced
- 2 roma tomatoes, seeded and finely diced
- ¼ cup cilantro, chopped
- 1-2 limes, juice of
- Pinch salt, to taste
- Craize Sweet Corn Toasted Crackers
- Add all ingredients except the lime, salt, and crackers to a large bowl. Drizzle with the juice from one lime and a pinch of salt and toss.
- Taste and add more lime juice and salt if desired. Serve chilled with the Craize crackers to dip!
